Ingredients

  • 200 g (1 ½ cups) all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • Pinch of salt
  • 250 ml (1 cup) milk
  • 1 large egg
  • 2 tbsp melted butter or vegetable oil
  • 1 tsp vanilla extract (optional, but recommended)
  • Butter or oil for frying

Preparation Steps

  1. Mix dry ingredients:

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt — this gives the pancakes their signature lift and softness.

  2. Mix wet ingredients:

In a separate bowl, beat the egg, then stir in the milk, melted butter, and vanilla. This adds richness and depth of flavor.

  3. Combine gently:

Pour the wet ingredients into the dry. Stir just until combined — a few lumps are totally fine. Overmixing will make the pancakes dense instead of fluffy.

  4. Cook like a pro:

Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil. Pour about 1/4 cup of batter for each pancake. When bubbles form on top and the edges look set (1–2 minutes), flip and cook another 1–2 minutes until golden brown.

  5. Serve with love:

Stack ‘em high and top with whatever your heart desires — maple syrup, honey, fresh berries, yogurt, or a dollop of whipped cream.

Chef's Tip

  • Let the batter rest for 5–10 minutes before cooking — it helps the gluten relax and makes the pancakes extra tender.
  • For a flavor twist, add a dash of cinnamon or a handful of blueberries or chocolate chips right into the batter.
  • Want perfectly round pancakes? Use a lightly greased ring mold or pour batter into the pan using a measuring cup for consistent shape and size.
