Ingredients

For the salad:

  • 1 head romaine lettuce, chopped
  • 1 chicken breast, boneless & skinless
  • ¼ cup Parmesan cheese, shaved
  • 2 slices bread (ciabatta or baguette), cubed
  • 1 tbsp olive oil
  • Salt & black pepper to taste

For the dressing:

  • 1 egg yolk (or 1 whole egg for a lighter version)
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1 tbsp lemon juice
  • ¼ cup olive oil
  • 1 garlic clove, minced
  • Salt & black pepper to taste
  • *(Alternative: 3 tbsp mayo + lemon juice + garlic for a quicker dressing)*

Preparation Steps

  1. Cook the chicken:

    • Season the chicken breast with salt and pepper.
    • Heat olive oil in a pan over medium heat and cook the chicken for 6–7 minutes per side until golden and cooked through. Let it rest, then slice.
  2. Make the croutons:

    • Toss bread cubes with olive oil, salt, and pepper.
    • Bake at 180°C (350°F) for 8–10 minutes until crispy, or toast in a pan.
  3. Prepare the dressing:

    • Whisk egg yolk, mustard, Worcestershire sauce, lemon juice, and garlic.
    • Slowly drizzle in olive oil while whisking until creamy. Season with salt and pepper.
  4. Assemble the salad:

    • Toss romaine lettuce with the dressing.
    • Top with sliced chicken, croutons, and Parmesan shavings.

Chef's Tip

  • For extra flavor: Add anchovy paste (or mashed anchovies) to the dressing.
  • Crispier croutons: Use day-old bread and bake at a lower temperature (160°C) for longer.
  • Simpler version: Use store-bought Caesar dressing and rotisserie chicken.
