For the salad:
- 1 head romaine lettuce, chopped
- 1 chicken breast, boneless & skinless
- ¼ cup Parmesan cheese, shaved
- 2 slices bread (ciabatta or baguette), cubed
- 1 tbsp olive oil
- Salt & black pepper to taste
For the dressing:
- 1 egg yolk (or 1 whole egg for a lighter version)
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- 1 tbsp lemon juice
- ¼ cup olive oil
- 1 garlic clove, minced
- Salt & black pepper to taste
- *(Alternative: 3 tbsp mayo + lemon juice + garlic for a quicker dressing)*
Preparation Steps

Cook the chicken:
- Season the chicken breast with salt and pepper.
- Heat olive oil in a pan over medium heat and cook the chicken for 6–7 minutes per side until golden and cooked through. Let it rest, then slice.

Make the croutons:
- Toss bread cubes with olive oil, salt, and pepper.
- Bake at 180°C (350°F) for 8–10 minutes until crispy, or toast in a pan.

Prepare the dressing:
- Whisk egg yolk, mustard, Worcestershire sauce, lemon juice, and garlic.
- Slowly drizzle in olive oil while whisking until creamy. Season with salt and pepper.

Assemble the salad:
- Toss romaine lettuce with the dressing.
- Top with sliced chicken, croutons, and Parmesan shavings.
Chef's Tip
- For extra flavor: Add anchovy paste (or mashed anchovies) to the dressing.
- Crispier croutons: Use day-old bread and bake at a lower temperature (160°C) for longer.
- Simpler version: Use store-bought Caesar dressing and rotisserie chicken.
