Ingredients

For the Soup

  • 300 g (10 oz) chicken breast or thighs
  • 150 g (5 oz) egg noodles or vermicelli
  • 1 carrot
  • 1 medium onion
  • 2 medium potatoes
  • 1 celery stalk (optional)
  • 2 cloves of garlic
  • 2 tbsp vegetable oil or butter
  • 1.5 liters (6 cups) water or chicken broth
  • Salt and pepper to taste
  • Fresh parsley or dill for garnish

Preparation Steps

  1. Prepare the chicken:

    Cut the chicken into medium pieces. In a large pot, sauté it in oil or butter until lightly golden (about 5–7 minutes). Remove and set aside.

  2. Sauté the vegetables:

    In the same pot, add diced onion and grated carrot. Cook for 3–4 minutes until softened. Add minced garlic and cook for 1 more minute.

  3. Add broth and boil:

    Pour in the water or broth. Add chopped potatoes (and celery if using). Bring to a boil.

  4. Return chicken to pot:

    Add the cooked chicken back into the soup. Simmer for 15–20 minutes until vegetables are tender.

  5. Add noodles:

    Add the noodles and cook according to package instructions (usually 5–7 minutes).

  6. Season and serve:

    Add salt, pepper, and herbs to taste. Serve hot, garnished with fresh parsley or dill.

Chef's Tip

  • Add a bay leaf or a few peppercorns during simmering for a richer broth.
  • For deeper flavor, use bone-in chicken pieces and remove the bones before serving.
  • Don’t overcook the noodles — add them near the end so they stay al dente.
