For the Soup
- 300 g (10 oz) chicken breast or thighs
- 150 g (5 oz) egg noodles or vermicelli
- 1 carrot
- 1 medium onion
- 2 medium potatoes
- 1 celery stalk (optional)
- 2 cloves of garlic
- 2 tbsp vegetable oil or butter
- 1.5 liters (6 cups) water or chicken broth
- Salt and pepper to taste
- Fresh parsley or dill for garnish
Preparation Steps

Prepare the chicken:
Cut the chicken into medium pieces. In a large pot, sauté it in oil or butter until lightly golden (about 5–7 minutes). Remove and set aside.

Sauté the vegetables:
In the same pot, add diced onion and grated carrot. Cook for 3–4 minutes until softened. Add minced garlic and cook for 1 more minute.

Add broth and boil:
Pour in the water or broth. Add chopped potatoes (and celery if using). Bring to a boil.

Return chicken to pot:
Add the cooked chicken back into the soup. Simmer for 15–20 minutes until vegetables are tender.

Add noodles:
Add the noodles and cook according to package instructions (usually 5–7 minutes).

Season and serve:
Add salt, pepper, and herbs to taste. Serve hot, garnished with fresh parsley or dill.
Chef's Tip
- Add a bay leaf or a few peppercorns during simmering for a richer broth.
- For deeper flavor, use bone-in chicken pieces and remove the bones before serving.
- Don’t overcook the noodles — add them near the end so they stay al dente.
